Ingredients
Yellow lentils
Curry paste
Tinned tomato
Brown rice
Method
Fry curry paste
Add yellow lentils + 3 cups of water for every one cup of lentils
Add tinned tomato
Bring to the boil, then simmer until lentils are soft
Serve with brown rice

1 tbsp soy sauce
1/2 fresh lime
4tbsp sweet chili sauce
1tbsp peanut butter
Ingredients
Rice noodles
Assortment of your favorite vegetables (try kale, broccoli and capsicum)
Tofu, marinated/prepared to your liking
Garnish
Thai basil
Coriander
Fried onions/noodles (optional, but tastes amazing!)
Crushed peanuts
Bean sprouts
Spring onions
Method
Soak the noodles in hot water
Combine all of the sauce ingredients on low heat
Add the tofu, stir until coated
Stir in the vegetables with tbsp of water and simmer until vegetables are soft
Serve & garnish
